What makes Caffè Mauro unique?
Nowadays, Caffè Mauro relies on cutting-edge roasting systems. A computer-controlled roasting system calculates and applies optimum conditions for every type and grade of coffee bean. Extremely slow roasting ('tostatura lenta') allows the water content of the bean to evaporate gently. The sugar content caramelises in the bean, retaining the essential oils formed and giving the coffee its characteristic aroma.
